{"id":3592,"date":"2017-01-20T09:00:50","date_gmt":"2017-01-20T08:00:50","guid":{"rendered":"http:\/\/www.spicescave.com\/blog\/?p=3592"},"modified":"2017-01-17T14:20:02","modified_gmt":"2017-01-17T13:20:02","slug":"sopa-castellana","status":"publish","type":"post","link":"https:\/\/www.spicescave.com\/blog\/sopa-castellana\/","title":{"rendered":"Sopa Castellana"},"content":{"rendered":"<p style=\"text-align: justify;\"><em>\u00a1\u00a1\u00a1\u00a1Qu\u00e9 frio hace!!!!<\/em>, aqu\u00ed en el pueblo estamos casi bajo cero as\u00ed que he decido hacer <strong>Sopa Castellana<\/strong> y como no, he dicho vamos a ponerla en el blog que seguro que algo calentito nos gusta a todos.<\/p>\n<p style=\"text-align: justify;\">&nbsp;<\/p>\n<p style=\"text-align: justify;\">La <b>sopa Castellana, sopas de ajo, o sopa de pan<\/b> es un plato tradicional espa\u00f1ol de la zona de <strong>Castilla y Le\u00f3n<\/strong> que se prepara con agua o caldo, pan (duro o <em>&#8220;asentao&#8221;<\/em>), piment\u00f3n, ajo, <a title=\"Comprar Laurel\" href=\"https:\/\/www.spicescave.com\/es\/cocina-mediterranea\/55-comprar-laurel-en-hojas.html\" target=\"_blank\">laurel<\/a>, aceite y huevo. Es un plato familiar y su preparaci\u00f3n var\u00eda mucho de una casa a otra, pero sobre todo es reconfortante, tanto que se le atribuyen propiedades reconstituyentes y dice la tradici\u00f3n que es perfecta para recuperarse despu\u00e9s de una noche de juerga, incluso hay un poema de <a title=\"Ricardo de la Vega\" href=\"https:\/\/es.wikipedia.org\/wiki\/Ricardo_de_la_Vega\">Ricardo de la Vega<\/a>&nbsp; dedicado a las siete virtudes de las sopas de ajo:<\/p>\n<p style=\"text-align: center;\"><em>Siete virtudes<\/em><br \/>\n<em> tienen las sopas<\/em><br \/>\n<em> quitan el hambre,<\/em><br \/>\n<em> y dan sed poca<\/em><br \/>\n<em> Hacen dormir<\/em><br \/>\n<em> y digerir<\/em><br \/>\n<em> Nunca enfadan<\/em><br \/>\n<em> y siempre agradan<\/em><br \/>\n<em> Y cr\u00edan la cara<\/em><br \/>\n<em> colorada<\/em><\/p>\n<p style=\"text-align: justify;\">&nbsp;<\/p>\n<p style=\"text-align: justify;\">La <b>sopa Castellana<\/b> es un plato de las \u00e9pocas de frio y la receta que os voy a poner aqu\u00ed es la <em>versi\u00f3n extreme\u00f1a<\/em> que es la que preparaba mi abuela Paca, como sab\u00e9is los que conoc\u00e9is esa tierra si no lleva cominos no es extreme\u00f1o as\u00ed que si os gustan pod\u00e9is ech\u00e1rselos justo con el piment\u00f3n. Es un plato contundente y mi abuela me contaba que antiguamente era un almuerzo como las migas, y que se tomaban dos o tres horas despu\u00e9s de tomarse el caf\u00e9 al levantarse (al alba) cuando se estaba en la<em> &#8220;era&#8221;<\/em> (en el campo).<\/p>\n<p style=\"text-align: justify;\">&nbsp;<\/p>\n<p style=\"text-align: justify;\">A mi me gusta preparar el caldo de la&nbsp;<b>sopa Castellana<\/b> con huesos de jam\u00f3n y muslos de gallina, pero hay quien usa esqueletos de pollo unicamente o usa caldo de verduras y hay quien solo usa agua, sobre todo antes cuando hab\u00eda problemas con la comida, sobre todo despu\u00e9s de la guerra, se preparaba con el piment\u00f3n, el ajo, el agua y el pan \u00fanicamente.<\/p>\n<p style=\"text-align: justify;\">Para este plato es fundamental un buen piment\u00f3n, para m\u00ed sin duda el <strong>piment\u00f3n de la Vera<\/strong> con ese delicioso toque ahumado y me decanto por el <em>&#8220;<a title=\"Comprar piment\u00f3n agridulce\" href=\"https:\/\/www.spicescave.com\/es\/cocina-espanola\/116-comprar-pimenton-agridulce-ahumado-el-angel.html\" target=\"_blank\">Piment\u00f3n agridulce o okal<\/a>&#8220;<\/em> que le da un toquecillo ligeramente picante, pero pod\u00e9is usar el <em>&#8220;P<a title=\"Comprar piment\u00f3n dulce\" href=\"https:\/\/www.spicescave.com\/es\/cocina-espanola\/100-comprar-pimenton-dulce-ahumado-el-angel.html\" target=\"_blank\">iment\u00f3n dulce<\/a>&#8220;<\/em> o el <em>&#8220;<a title=\"Comprar piment\u00f3n picante\" href=\"https:\/\/www.spicescave.com\/es\/cocina-internacional\/101-comprar-pimenton-picante-ahumado-el-angel.html\" target=\"_blank\">Piment\u00f3n picante<\/a>&#8220;<\/em> seg\u00fan vuestro gusto. Por supuesto nosotros usamos el <strong>Piment\u00f3n del \u00c1ngel<\/strong>, que es 100% de la Vera, aqu\u00ed hay que tener mucho ojo y ver de donde son los pimientos que usan.<\/p>\n<p style=\"text-align: justify;\"><a href=\"http:\/\/www.spicescave.com\/blog\/wp-content\/uploads\/2017\/01\/pimenton-agridulce-ahumado-el-angel.jpg\"><img loading=\"lazy\" class=\"aligncenter style=\"text-align: justify;\">Tambi\u00e9n os recomiendo que para la <b>sopa Castellana<\/b> us\u00e9is pan duro o &#8220;asentado&#8221; (mejor de hogaza o el mejor de todos pan candeal) para hacer la sopa y no hag\u00e1is trozos sino medias lunas finitas, queda mucho mejor la sopa.<\/p>\n<p style=\"text-align: justify;\">Y ahora sin m\u00e1s os dejo la receta de la <b>sopa Castellana<\/b>,
