{"id":3450,"date":"2016-11-04T14:05:16","date_gmt":"2016-11-04T13:05:16","guid":{"rendered":"http:\/\/www.spicescave.com\/blog\/?p=3450"},"modified":"2019-11-18T10:40:53","modified_gmt":"2019-11-18T09:40:53","slug":"cochinita-pibil","status":"publish","type":"post","link":"https:\/\/www.spicescave.com\/blog\/cochinita-pibil\/","title":{"rendered":"Cochinita Pibil"},"content":{"rendered":"<p style=\"text-align: justify;\">Hoy os traigo un plato <em>yucateco<\/em>, la <strong>Cochinita Pibil<\/strong>, un plato tradicional de la regi\u00f3n de Yucat\u00e1n en <em>M\u00e9xico<\/em> y que tiene sabor <em>maya<\/em> por los cuatro costados.<\/p>\n<p style=\"text-align: justify;\">La<strong> Cochinita Pibil<\/strong> es un plato un plato tradicional de la cocina yucateca (M\u00e9xico), es picante e intenso y est\u00e1 preparado a base de carnes de cerdo de diversas partes, el nombre de Pibil proviene proviene de la forma tradicional en la que se prepara este plato, ya que los mayas que fueron los primeros en preparar este plato, utilizaban unos hornos, los <strong>Pib<\/strong>, que se hac\u00edan cavando un hoyo en el suelo y cubri\u00e9ndolo con piedras y sobre los que se encend\u00eda un fuego para calentar esas piedras y la tierra del hoyo, cuando el fuego se apagaba se retiraban las ascuas y se met\u00eda la comida dentro del hoyo envuelto en hojas de pl\u00e1tano (en forma de tamal) y se cubr\u00eda de tierra, dejando que se cocinaran los alimentos muy, muy lentamente.&nbsp; Hoy en d\u00eda se cocina en el horno a fuego bajo (150-160\u00baC) durante 2 \u00f3 3 horas.<\/p>\n<figure id=\"attachment_3455\" aria-describedby=\"caption-attachment-3455\" style=\"width: 357px\" class=\"wp-caption aligncenter\"><a href=\"https:\/\/www.flickr.com\/photos\/vilseskogen\/2575468652\/\"><img loading=\"lazy\" class=\" wp-image-3455\" src=\"http:\/\/www.spicescave.com\/blog\/wp-content\/uploads\/2016\/10\/Fruto_achiote_Vilseskogen_2575468652_f416f86622_z.jpg\" alt=\"Fruto del achiote\" width=\"357\" height=\"268\"><\/a><figcaption id=\"caption-attachment-3455\" class=\"wp-caption-text\">Fruto del Achiote<br \/>Photo by Vilseskogen @ Flickr<\/figcaption><\/figure>\n<p style=\"text-align: justify;\">El <strong>Achiote<\/strong>, <em>achote, bixina, uruc\u00fa o onoto<\/em> es un condimento que proviene de moler las peque\u00f1as semillas rojas y de forma triangular de un arbusto llamado tambi\u00e9n <strong>Achiote<\/strong> (<i><a title=\"Bixa orellana\" href=\"https:\/\/es.wikipedia.org\/wiki\/Bixa_orellana\">Bixa orellana<\/a><\/i>) y que es originaria del Caribe y Sudam\u00e9rica. Su nombre proviene de la castellanizaci\u00f3n del termino Maya &#8220;<em>nahuatl achiotl&#8221;,<\/em> y que era usado por los <strong>Mayas<\/strong> como elemento ritual para colorear sus cuerpos en los ritos religiosos precolombinos.<\/p>\n<p style=\"text-align: justify;\">Me ha encantado un video de como se prepara de verdad la <strong>Cochinita Pibil<\/strong>, el video no es muy bueno pero creo que merece la pena.<\/p>\n<p style=\"text-align: justify;\">&nbsp;<\/p>\n<p><iframe loading=\"lazy\" src=\"https:\/\/www.youtube.com\/embed\/3xwmOnvfhUc\" allowfullscreen=\"allowfullscreen\" width=\"560\" height=\"315\" frameborder=\"0\"><\/iframe><\/p>\n<p style=\"text-align: justify;\">El <strong>Achiote<\/strong> tiene un sabor ligeramente amargo, un poco dulz\u00f3n y picante con toques a nuez y a humo y la caracter\u00edstica principal de la <a title=\"Comprar Achiote\" href=\"https:\/\/www.spicescave.com\/es\/cocina-mexicana\/306-achiote-comprar.html\" target=\"_blank\"><strong>pasta de Achiote<\/strong><\/a> es el profundo color rojo que da a cualquier plato en el que lo usemos, adem\u00e1s del sabor a las especias que incluye la mezcla (<em>recado
