El <strong>ceviche <\/strong>peruano es un plato delicioso que se consume en todo el pa\u00eds, que data de la \u00e9poca precolombina, y tiene su origen en la cultura Tall\u00e1n quienes preparaban un plato a base de pescado fresco que se cocinaba en tumbo, que es el zumo fermentado de una fruta denominada <em>curuba, <\/em>en la \u00e9poca del <em>Imperio Inca<\/em> el pescado se maceraba en<em> chicha <\/em>(es una bebida ligeramente alcoh\u00f3lica a base de ma\u00edz fermentado), si bien el pescado con sal y aj\u00ed se consum\u00eda por toda la costa peruana.<\/p>\n<figure id=\"attachment_3350\" aria-describedby=\"caption-attachment-3350\" style=\"width: 506px\" class=\"wp-caption aligncenter\"><a href=\"http:\/\/www.spicescave.com\/blog\/wp-content\/uploads\/2016\/07\/Machu_Pichu_Peru_Stephane_Viau_8096618747_ef44f2ceeb_z.jpg\"><img loading=\"lazy\" class=\" wp-image-3350\" src=\"http:\/\/www.spicescave.com\/blog\/wp-content\/uploads\/2016\/07\/Machu_Pichu_Peru_Stephane_Viau_8096618747_ef44f2ceeb_z.jpg\" alt=\"Machu Pichu (Per\u00fa)\" height=\"379\" width=\"506\" srcset=\"https:\/\/www.spicescave.com\/blog\/wp-content\/uploads\/2016\/07\/Machu_Pichu_Peru_Stephane_Viau_8096618747_ef44f2ceeb_z.jpg 640w, https:\/\/www.spicescave.com\/blog\/wp-content\/uploads\/2016\/07\/Machu_Pichu_Peru_Stephane_Viau_8096618747_ef44f2ceeb_z-632x474.jpg 632w\" sizes=\"(max-width: 506px) 100vw, 506px\" \/><\/a><figcaption id=\"caption-attachment-3350\" class=\"wp-caption-text\">Machu Pichu (Per\u00fa)<br \/>By Stephane Viau @ Flickr<\/figcaption><\/figure>\n<p style=\"text-align: justify;\">Podemos preparar el <strong>cevich<\/strong>e con diferentes pescados e incluso a\u00f1adir gambas, camarones, carne de cangrejo&#8230;se pueden marinar con lim\u00f3n o con lima, incluso encontrareis recetas que usan naranja agria ya que fue usada para marinar el pescado por las mujeres \u00e1rabes que llev\u00f3 <strong>Pizarro<\/strong> al nuevo mundo. En cuanto al ali\u00f1o, incluye cebolla morada y aj\u00ed amarillo (una picante delicia peruana), cilantro fresco picado y en algunos pa\u00edses se le a\u00f1ade tomate triturado y aguacate como hacen en M\u00e9xico.<\/p>\n<p style=\"text-align: justify;\">&nbsp;<\/p>\n<p style=\"text-align: justify;\">El truco del <strong>Ceviche lime\u00f1o<\/strong>, no es otro que no dejar que el pescado se <em>&#8220;cueza&#8221;<\/em> en la lima o el lim\u00f3n, por eso suelen servirlo casi al instante de a\u00f1adirle el c\u00edtrico. Al caldito que se crea de mezclar el pescado, la cebolla, el lim\u00f3n, el aj\u00ed y el cilantro se le denomina <em>&#8220;leche de tigre&#8221;<\/em> y es una autentica delicia o como se dice por all\u00ed, <em>&#8220;oro puro&#8221;, <\/em>y os dir\u00e9 que por all\u00ed hay costumbre de tomarla como desayuno para aquellos que no han terminado la noche y como <em>afrodisiaco<\/em>. Existe una variedad de la <em>&#8220;leche de tigre&#8221;<\/em> denominada <em>&#8220;leche de pantera&#8221;<\/em> y que se obtiene del ceviche que se prepara en el departamento de<strong> Piura<\/strong> y <strong>Tumbes<\/strong> y que se prepara con <em>conchas negras <\/em>(un bibalbo de gran tama\u00f1o de sabor similar al berberecho).<\/p>\n<p style=\"text-align: justify;\">Podemos encontrar diferentes variedades de <strong>ceviches peruanos<\/strong>, seg\u00fan los ingredientes que usemos para prepararlo, as\u00ed tendremos:<\/p>\n<p style=\"text-align: justify; padding-left: 30px;\"><strong>Ceviche de pescado:<\/strong> que se preparan generalmente con mero, perico (pez lim\u00f3n), lenguado, caballa, etc.<\/p>\n<p style=\"text-align: justify; padding-left: 30px;\"><strong>Ceviche mixto:<\/strong> preparados con pescados y mariscos.<\/p>\n<p style=\"text-align: justify; padding-left: 30px;\"><strong>Ceviche de conchas negras:<\/strong> a base de conchas negras y marinado con <em>lim\u00f3n de Chulucanas<\/em> (ciudad del departamento de Piura), cebolla roja, ajo, <em>aji<\/em> y <em>rocoto<\/em> peruano (es un tipo de pimiento).<\/p>\n<p style=\"text-align: justify; padding-left: 30px;\"><strong>Ceviche de camarones:<\/strong> a base de gambas, es t\u00edpico de la regi\u00f3n de Arequipa.<\/p>\n<p style=\"text-align: justify; padding-left: 30px;\"><strong>Ceviche de pulpo:<\/strong> se prepara con pulpo crudo o ligeramente hervido para suavizar la carne, se prepara igual que el de pescado.<\/p>\n<p style=\"text-align: justify; padding-left: 30px;\"><strong>Chinguirito:<\/strong> a base de carne de raya seca desmechada marinada en lim\u00f3n, aj\u00ed limo y cebolla roja, es t\u00edpico de la&nbsp; costa norte peruana.<\/p>\n<p style=\"text-align: justify; padding-left: 30px;\"><strong>Ceviche amaz\u00f3nico:<\/strong> este ceviche se prepara con pescados de r\u00edo, como la corvina, la doncella o el gigantesco <em>paiche<\/em>.<\/p>\n<p style=\"text-align: justify;\">&nbsp;<\/p>\n<p style=\"text-align: justify;\">En cuanto a con qu\u00e9 acompa\u00f1ar el <strong>ceviche<\/strong> depende&nbsp; principalmente de que pa\u00eds sea el plato, en Colombia y Panam\u00e1 lo acompa\u00f1an con galletas de soda, en Ecuador con <em>canguil<\/em> (palomitas de ma\u00edz) o <em>chifles<\/em> (rodajitas de platanito verde frito), en M\u00e9xico se sirve con tostadas de ma\u00edz o galletas saladas y en Panam\u00e1 con extra de <em>Aj\u00ed combo. <\/em>En Per\u00fa el <strong>ceviche<\/strong> se acompa\u00f1a de <em>camote <\/em>(batata) o<em> yuca <\/em>hervida<em>, choclo <\/em>(ma\u00edz)<em>, cancha serrana <\/em>(ma\u00edz gordo) y<em> chifles. <\/em><\/p>\n<p style=\"text-align: justify;\">&nbsp;<\/p>\n<p style=\"text-align: justify;\">Y ahora la receta del <strong>Ceviche Lime\u00f1o<\/strong>:<\/p>\n    <div class=\"blog-yumprint-recipe 1,5 cent\u00edmetro, picamos el cilantro y lo reservamos tambi\u00e9n.<\/li>\t\t\t\t<li class=\"blog-yumprint-method-item\" yumprintitem=\"3\">Mezclamos el pescado con la cebolla, el cilantro y una pizca de sal en un bol, exprimimos el zumo de la lima o el lim\u00f3n y removemos bien.<\/li>\t\t\t\t<li class=\"blog-yumprint-method-item\" yumprintitem=\"4\">Recordar no dejar que macere m\u00e1s de 10 minutos con el zumo de lim\u00f3n, ya que sino se \"cocer\u00e1\" demasiado y no estar\u00e1 tan rico.<\/li>\t\t\t<\/ol>\n\t\t<\/div>\t\t<div class=\"blog-yumprint-note-section\"
