{"id":3151,"date":"2016-05-09T09:00:48","date_gmt":"2016-05-09T07:00:48","guid":{"rendered":"http:\/\/www.spicescave.com\/blog\/?p=3151"},"modified":"2019-11-18T10:57:37","modified_gmt":"2019-11-18T09:57:37","slug":"el-garam-masala-y-el-delicioso-paneer-jalfrezi","status":"publish","type":"post","link":"https:\/\/www.spicescave.com\/blog\/el-garam-masala-y-el-delicioso-paneer-jalfrezi\/","title":{"rendered":"El Garam Masala y el delicioso Paneer Jalfrezi"},"content":{"rendered":"<p style=\"text-align: justify;\">Hoy os hablar\u00e9 del <strong>Garam Masala y el delicioso Paneer Jalfrezi<\/strong>, un plato de curry Indio grandioso pero sencillo y r\u00e1pido de cocinar, es perfecto de cena o para un aperitivo, incluso como entrante para una cena o comida india.<\/p>\n<p style=\"text-align: justify;\">Me gustar\u00eda hablaros en primer lugar del&nbsp;<a title=\"Comprar Garam Masala\" href=\"https:\/\/www.spicescave.com\/es\/comprar-especias-indias\/87-comprar-garam-masala.html\" target=\"_blank\"><strong>Garam masala<\/strong><\/a> (???? ????? en hindi), esta es sin duda la mezcla de especias m\u00e1s usada en toda la cocina india, el significado literal de <strong>garam masala<\/strong> es <em>&#8220;mezcla de especias&#8221;<\/em> y su nombre proviene aunque no lo cre\u00e1is del vocablo \u00e1rabe <em>masala<\/em> y que significa &#8220;condimento&#8221;.<\/p>\n<p style=\"text-align: justify;\"><a href=\"http:\/\/www.spicescave.com\/blog\/wp-content\/uploads\/2016\/05\/garam-masala_1.jpg\"><img loading=\"lazy\" class=\"aligncenter  wp-image-3155\" src=\"http:\/\/www.spicescave.com\/blog\/wp-content\/uploads\/2016\/05\/garam-masala_1-632x632.jpg\" alt=\"Garam Masala\" height=\"330\" width=\"330\" srcset=\"https:\/\/www.spicescave.com\/blog\/wp-content\/uploads\/2016\/05\/garam-masala_1-632x632.jpg 632w, https:\/\/www.spicescave.com\/blog\/wp-content\/uploads\/2016\/05\/garam-masala_1-290x290.jpg 290w, https:\/\/www.spicescave.com\/blog\/wp-content\/uploads\/2016\/05\/garam-masala_1-750x750.jpg 750w, https:\/\/www.spicescave.com\/blog\/wp-content\/uploads\/2016\/05\/garam-masala_1.jpg 1000w\" sizes=\"(max-width: 330px) 100vw, 330px\" \/><\/a>El&nbsp; <strong>garam masala<\/strong> m\u00e1s conocido es el originario del norte de La India, donde la cocina persa y mogol tuvieron una gran influencia y es sin duda la mezcla con m\u00e1s combinaciones que he encontrado en la red y en los libros de especias que tengo, existen tantas mezclas como cocineros y tenderos en la India, aun que generalmente incluyen chile rojo (cayena), ajo seco, polvo de jengibre, s\u00e9samo, semillas de mostaza, c\u00farcuma, cilantro, clavo, pimienta negra, cardamomo, canela, hojas de laurel, comino, nuez moscada, e hinojo y otras especias.<\/p>\n<p style=\"text-align: justify;\">En cuando a su aroma y sabor, el <strong>garam masala<\/strong> es muy arom\u00e1tico con toques de cilantro y comino, no es una mezcla picante pero si tiene un sabor intenso y ex\u00f3tico, tiene un color tostado que da colorido a los platos.<\/p>\n<p style=\"text-align: justify;\">El <strong>garam masala<\/strong> se utiliza tradicionalmente para aderezar platos de carne, verduras y arroz, en platos ta diversos como el <em>Murgh Makhani<\/em>, el <em>biryani de arroz y cordero<\/em> o el <em>paneer Jalfrezi<\/em> que os traemos hoy. La mezcla molida suele usarse de dos formas distintas a la hora de a\u00f1adirla a los platos, una es directamente, espolvoreando el <strong>garam masala<\/strong> sobre el plato antes de servir para acentuar los sabores y la otra es al principio de la cocci\u00f3n del plato para aromatizar.<strong><br \/>\n<\/strong><\/p>\n<p>&nbsp;<a href=\"http:\/\/www.spicescave.com\/blog\/wp-content\/uploads\/2016\/05\/garam-masala_2.jpg\"><img loading=\"lazy\" class=\"aligncenter  wp-image-3164\" src=\"http:\/\/www.spicescave.com\/blog\/wp-content\/uploads\/2016\/05\/garam-masala_2-632x632.jpg\" alt=\"garam masala\" height=\"439\" width=\"439\" srcset=\"https:\/\/www.spicescave.com\/blog\/wp-content\/uploads\/2016\/05\/garam-masala_2-632x632.jpg 632w, https:\/\/www.spicescave.com\/blog\/wp-content\/uploads\/2016\/05\/garam-masala_2-290x290.jpg 290w, https:\/\/www.spicescave.com\/blog\/wp-content\/uploads\/2016\/05\/garam-masala_2-750x750.jpg 750w, https:\/\/www.spicescave.com\/blog\/wp-content\/uploads\/2016\/05\/garam-masala_2.jpg 1000w\" sizes=\"(max-width: 439px) 100vw, 439px\" \/><\/a><\/p>\n<p style=\"text-align: justify;\">Y ahora vamos a hablar de nuestro ex\u00f3tico plato de curry, el <span id=\"result_box\" class=\"\" lang=\"es\"><strong>Paneer Jalfrezi<\/strong> es plato de la cocina india, simple y muy rico a base de <em>paneer<\/em>, algunas verduras y especias. El <strong>paneer jalfrezi<\/strong> se suele servir en la cena acompa\u00f1ado de <em>phulka<\/em> (el pan indio, se le llama tambi\u00e9n roti o chapati) y de <em>raita<\/em>, que es una salsa t\u00edpica de la cocina india que tiene como base el yogur al que se le a\u00f1ade mostaza en polvo (el ingrediente principal), cilantro, comino, hojas de menta, cayena y que se mezcla con pepino y cebollas picadas.<br \/>\n<\/span><\/p>\n<p style=\"text-align: justify;\">El <strong>Jalfrezi<\/strong> es un tipo mezcla de <em>curry indio<\/em> que generalmente se utiliza con verduras y carne picada marinadas que suele ser picante (en algunos casos muy picante), pero muy rico y que aqu\u00ed vamos a combinar con las verduras y el <em>paneer<\/em>. El <strong>Paneer<\/strong> (en hindi: ????? pan?r, del persa ???? panir) es un tipo de queso fresco que se suele preparar en las casas en La India y en el sur de Asia,&nbsp; y que es muy sencillo de preparar, para ello solo necesitamos leche fresca (con su nata y su todo) y lim\u00f3n, poner la leche a hervir y a\u00f1adirle el zumo de lim\u00f3n para que cuaje, recogemos con una gasa o un tamiz fino la leche coagulada y la separamos del liquido, apretamos bien y la dejamos que repose en la nevera.<\/p>\n<figure id=\"attachment_3157\" aria-describedby=\"caption-attachment-3157\"
