La <span id=\"result_box\" class=\"\" lang=\"es\">palabra <em>&#8220;\u00e9touff\u00e9e&#8221;<\/em> proviene del verbo franc\u00e9s <em>&#8220;\u00e9touffer<\/em><span class=\"\"><em>&#8220;<\/em> que significa &#8220;ahogar&#8221; o &#8220;asfixiar&#8221;, principalmente porque los cangrejos se echan cuando aun est\u00e1n vivos para cocinarlos, de ah\u00ed el nombre del plato.<\/span><br \/>\n<\/span><\/p>\n<div dir=\"ltr\" style=\"text-align: justify;\"><span class=\"\" lang=\"es\"><span class=\"\" lang=\"es\">El <strong>?touff\u00e9e<\/strong> se puede hacer con cualquier crust\u00e1ceo ya sean gambas, camarones, langosta o como en la versi\u00f3n m\u00e1s popular que se hace con cangrejos. La bas\u00e9 del plato es un <strong><a title=\"Roux\" href=\"https:\/\/es.wikipedia.org\/wiki\/Roux\" target=\"_blank\">roux<\/a> claro<\/strong> o <strong>rubio<\/strong>, al que se le a\u00f1ade caldo y especias y en el que hierve el marisco a fuego lento. y el agua en una olla, a\u00f1adimos la sal y ponemos la mitad de la cebolla en el centro de la olla y lo dejamos cocer hasta que se quede sin agua, cuando est\u00e9 listo retiramos del fuego y mantequilla que debe estar a unos 80 grados cent\u00edgrados, cuando la mantequilla est\u00e9 completamente disuelta en la mantequilla llevamos a ebullici\u00f3n sin dejar de remover y como necesitamos hacer un Roux Rubio lo dejaremos cocinar 4 o 5 minutos hasta que tena un color dorado y apartamos.<\/li>\t\t\t\t<li class=\"blog-yumprint-method-item\" yumprintitem=\"2\">En una sart\u00e9n ponemos un poco de aceite, cuando est\u00e9 caliente a\u00f1adimos las cebolletas y las pochamos hasta que est\u00e9n transparentes, a\u00f1adimos el ajo y lo dejamos dorarse, cuando est\u00e9 listo a\u00f1adimos las gambas y las rehogamos hasta que est\u00e9n rositas, cuando est\u00e9n listas a\u00f1adimos el tomate y la carne de cangrejo y dejamos que se rehogue durante un par de minutos, cuando est\u00e9 a\u00f1adimos el Roux y el condimento caj\u00fan, removiendo para que se mezcle bien, cuando est\u00e9 vamos a\u00f1adiendo el caldo poco a poco mientras removemos (si el caldo est\u00e1 caliente mejor que mejor), rectificamos de sal y dejamos cocer durante 15 o 20 minutos a fuego lento sin tapar (no dej\u00e9is que cueza m\u00e1s de 30 minutos porque el roux se
