El puerro me encanta, como buena vasca <strong>la porrusalda<\/strong> me parece un plato de cuchara de categor\u00eda <strong>Estrella Michel\u00edn<\/strong>. Pero otro d\u00eda os lo cuento, hoy os dir\u00e9 el secreto del puerro al vapor, en este caso <em>la compra<\/em> es clave, cuanto menos basto y grueso sea mejor, pensar que si pod\u00e9is conseguirlos procedentes de la huerta, de lujo.<\/p>\n<p style=\"text-align: justify;\"><strong>El puerro<\/strong> (<em>allium ampeloprasum var. porrum<\/em>)( ojo que no porro \ud83d\ude09 )&nbsp;&nbsp;es una planta de la familia de las lil\u00e1ceas como la cebolla y el ajo, es originaria de Europa y Asia Occidental y de ella se consumen tanto los bulbos como las hojas y las flores. El <strong>puerro<\/strong> se utiliza en Europa desde hace mucho tiempo y ya era consumida sobre el 4.000 a.C en el Antiguo Egipto y el lejano Oriente. Los romanos lo utilizaban en sus platos y se dice en el emperador Ner\u00f3n era un apasionado de las sopas de puerro. Listo Ner\u00f3n era un t\u00edo listo y casi seguro de cerca de Bilbao.<\/p>\n<p style=\"text-align: justify;\">Al <strong>puerro<\/strong> se le otorgan propiedades similares al ajo, pero sus principios activos son mucho m\u00e1s suaves, se dice que el jugo del puerro es un potente insecticida y se han realizado estudios cl\u00ednicos en ratas de laboratorio que indican beneficios hipotensores.<\/p>\n<p style=\"text-align: justify;\">&nbsp;<\/p>\n<p style=\"text-align: justify;\">El <strong>puerro<\/strong> tiene un sabor similar a la cebolla dulce, pero m\u00e1s suave y delicado, es un elemento imprescindible a la hora de preparar un buen caldo o un sofrito, incluso la parte m\u00e1s blanca es una delicia de comer en crudo en una ensalada por ejemplo. El puerro puede prepararse de m\u00faltiples formas, al vapor, en papillote, asados o a la brasa (como los <a title=\"Cal\u00e7ots con Salsa Romesco\" href=\"http:\/\/www.spicescave.com\/blog\/calcots-con-salsa-romesco\/\" target=\"_blank\">Cal\u00e7ots<\/a>), fritos, en conserva, etc.<\/p>\n<p style=\"text-align: justify;\"><a href=\"http:\/\/www.spicescave.com\/blog\/wp-content\/uploads\/2015\/05\/bodegon_1_DSC08206_750x500_wm.jpg\"><img loading=\"lazy\" class=\"aligncenter  wp-image-2430\" src=\"http:\/\/www.spicescave.com\/blog\/wp-content\/uploads\/2015\/05\/bodegon_1_DSC08206_750x500_wm-632x421.jpg\" alt=\"Cal\u00e7ots con Salsa Romesco\" height=\"293\" width=\"440\" srcset=\"https:\/\/www.spicescave.com\/blog\/wp-content\/uploads\/2015\/05\/bodegon_1_DSC08206_750x500_wm-632x421.jpg 632w, https:\/\/www.spicescave.com\/blog\/wp-content\/uploads\/2015\/05\/bodegon_1_DSC08206_750x500_wm.jpg 750w\" sizes=\"(max-width: 440px) 100vw, 440px\" \/><\/a><\/p>\n<p style=\"text-align: justify;\">&nbsp;<\/p>\n<p style=\"text-align: justify;\">El plato que os traemos hoy es una verdadera delicia, son los<strong> Puerros a la vinagreta<\/strong>, es un plato que me chifla comer en <strong>Navarra<\/strong> o <strong>La Rioja<\/strong>, cada vez que se puede, que suele ser de higos a peras, pero me he adaptado la receta a hacerla en casa como he podido, en este caso con mi nueva m\u00e1quina Nutribaby de babymoov. En este caso es importante que no sea ni muy finos ni muy gruesos y que sean ?<em>purita mantequilla<\/em>?? y solo usaremos la parte blanca.<\/p>\n<p style=\"text-align: justify;\">Al sacarlos de la cocci\u00f3n al vapor, os recomiendo poner los en un plato hondo o con capacidad para poder ba\u00f1arlos en aceite y que puedan macerar mientras prepar\u00e1is el ?<em>picadito<\/em>?? y luego los escurr\u00eds del aceite y se lo ech\u00e1is el por encima y a disfrutar.<\/p>\n<p style=\"text-align: justify;\">Y ahora como no, la receta.<\/p>\n<p style=\"text-align: justify;\">&nbsp;<\/p>\n class=\"blog-yumprint-method-item\" yumprintitem=\"0\">En nuestra maquina u olla de cocinar al vapor ponemos a cocer los puerros durante 10 minutos.<\/li>\t\t\t\t<li class=\"blog-yumprint-method-item\" yumprintitem=\"1\">Cuando est\u00e9n sacamos los puerros, los ponemos estirados en una fuente y les a\u00f1adimos por encima el aceite de oliva para que se vayan macerando mientras preparamos el \u201cpicadito\u201d.<\/li>\t\t\t\t<li class=\"blog-yumprint-method-item\" yumprintitem=\"2\">El picadito lo preparamos cortando muy fino en cuadraditos la cebolla dulce, al ser posible la blanca de ensaladas, los pimientos del piquillo y los pepinillo en vinagre (y el tomate si lo pon\u00e9is) y pimiento verde, a\u00f1adimos el vinagre de M\u00f3dena y lo mezclamos bien.<\/li>\t\t\t\t<li class=\"blog-yumprint-method-item\" yumprintitem=\"3\">Escurrimos los puerros del aceite o si no os hab\u00e9is pasado los dej\u00e1is con el mismo aceite les ech\u00e1is el picadillo por encima, pon\u00e9is un poco de sal ahumada en escama y a disfrutar.<\/li>\t\t\t<\/ol>\n\t\t<\/div>\t\t<div class=\"blog-yumprint-note-section\"
