{"id":4754,"date":"2019-08-12T10:00:25","date_gmt":"2019-08-12T08:00:25","guid":{"rendered":"http:\/\/www.spicescave.com\/blog\/?p=4754"},"modified":"2019-08-09T18:35:04","modified_gmt":"2019-08-09T16:35:04","slug":"caballa-a-la-barbacoa","status":"publish","type":"post","link":"http:\/\/www.spicescave.com\/blog\/caballa-a-la-barbacoa\/","title":{"rendered":"Caballa a la barbacoa"},"content":{"rendered":"<p style=\"text-align: justify;\">Seguimos con el verano y una de las cosas m\u00e1s tradicionales del verano son las barbacoas, pero como no solo de barbacoa de panceta vive el hombre como nos recomendaba el otro d\u00eda la eminente <a title=\"Boticaria Garcia\" href=\"https:\/\/boticariagarcia.com\/\" target=\"_blank\">Boticaria Garc\u00eda<\/a>, hoy os propongo meter en la barbacoa un pescado de temporada, <strong>la caballa a la barbacoa<\/strong>, estar atentos que os cuento como.<\/p>\n<p style=\"text-align: justify;\">La <b>caballa<\/b> o <b>verdel<\/b> <em>(Scomber scombrus)<\/em> es un pez que abunda en el oc\u00e9ano Atl\u00e1ntico y en el mar Mediterr\u00e1neo que se alimenta de otros peces m\u00e1s peque\u00f1os as\u00ed como de crust\u00e1ceos y moluscos. Es normalmente un pez de fondo, suele nadar en aguas abiertas a unos 170 metros de profundidad pero cuando el agua se calienta suelen agruparse en bancos que suben a la superficie cerca de la costa para aparearse y desovar. La <strong>caballa<\/strong> tiene un aspecto caracter\u00edstico, al menos la del mediterr\u00e1neo, ya que tienen unos inmensos ojos y unas rallas de color verde que cubren la parte superior y los costados del pez. Estos peces pueden llegar a medir hasta 60 cm y pesar 4 kilos.<\/p>\n<p style=\"text-align: justify;\">Ojito porque la <strong>caballa<\/strong> es un pescado con un alto contenido en <a title=\"Purina\" href=\"https:\/\/es.wikipedia.org\/wiki\/Purina\">purinas<\/a>, que se transforman en <a title=\"\u00c1cido \u00farico\" href=\"https:\/\/es.wikipedia.org\/wiki\/%C3%81cido_%C3%BArico\">\u00e1cido \u00farico<\/a>, por lo que no se recomienda su ingesta en casos de hiperuricem\u00eda o gota.<\/p>\n<p style=\"text-align: justify;\">Este pescado se utiliza, gastron\u00f3micamente hablando, en todo el mediterr\u00e1neo y el cant\u00e1brico de muchas formas distintas, pero la receta m\u00e1s habitual es la caballa en escabeche o en aceite (en conserva), pero tambi\u00e9n podemos encontrar delicias como los<strong> fideos con caballa<\/strong> t\u00edpicos de <em>La Isla<\/em> en <em>Cadiz.<\/em><\/p>\n<figure caballas sean grandecitas y lo segundo que trat\u00e9is de hacerlas, en lugar de con carb\u00f3n con sarmientos, es una delicia el sabor que aporta el humo.<\/p>\n<p style=\"text-align: justify;\">Y class=\"blog-yumprint-method-item\" yumprintitem=\"0\">Lo primero es tener bien limpias las caballas quit\u00e1ndole la tripa y abri\u00e9ndolas por la barriga en forma de libro sin quitar la espina (quedan m\u00e1s jugosas).<\/li>\t\t\t\t<li class=\"blog-yumprint-method-item\" yumprintitem=\"1\">En un bol mezclamos el zumo del lim\u00f3n, el aceite, el romero, la pimienta rosa y 1\/2 cucharadita de sal gourmet y lo batimos con un tenedor para que se mezcle bien.<\/li>\t\t\t\t<li class=\"blog-yumprint-method-item\" yumprintitem=\"2\">Con ayuda de una brocha untamos con bastante cantidad el interior de las caballas y tambi\u00e9n por la parte exterior.<\/li>\t\t\t\t<li class=\"blog-yumprint-method-item\" yumprintitem=\"3\">Dejamos un rato que se impregne bien y volvemos a untarlas por dentro, ponemos las caballas en una rejilla para barbacoa o las atravesamos con un par de palitos de pinchitos para darlas bien la vuelta en la barbacoa.<\/li>\t\t\t\t<li class=\"blog-yumprint-method-item\" yumprintitem=\"4\">La ponemos en la barbacoa con ascuas, que no haya fuego, a\u00f1adimos sal gourmet por encima y las cocinamos unos 5 minutos por cada lado
