{"id":4731,"date":"2019-08-05T10:00:28","date_gmt":"2019-08-05T08:00:28","guid":{"rendered":"http:\/\/www.spicescave.com\/blog\/?p=4731"},"modified":"2019-11-18T10:31:14","modified_gmt":"2019-11-18T09:31:14","slug":"poke-hawaiiano","status":"publish","type":"post","link":"http:\/\/www.spicescave.com\/blog\/poke-hawaiiano\/","title":{"rendered":"Poke hawaiiano"},"content":{"rendered":"<p style=\"text-align: justify;\">Hoy os traigo una receta fresquita y muy interesante, es el <strong>Poke Hawaiiano<\/strong>, o <strong>Poke<\/strong> (&#8220;cortar&#8221; o &#8220;seccionar&#8221; en hawaiano) moderno est\u00e1 a caballo entre un <a title=\"Ceviche Lime\u00f1o\" href=\"http:\/\/www.spicescave.com\/blog\/ceviche-limeno\/\" target=\"_blank\"><em>ceviche<\/em><\/a> y <em>tartar<\/em> ya que se prepara&nbsp; a base de pescado crudo marinado y verduras frescas.<\/p>\n<p style=\"text-align: justify;\">El <strong>Poke<\/strong> es un plato tradicional Hawaiiano que se utilizaba para reponer fuerzas a lo largo del d\u00eda en todas las <a title=\"Gastronomia de Hawaii\" href=\"http:\/\/www.spicescave.com\/blog\/gastronomia-de-hawaii\/\" target=\"_blank\">Islas de Hawaii<\/a> y que consist\u00eda en pescado limpio de tripas y la cabeza, cortado en filetes y se acompa\u00f1aba de <a title=\"Sal roja de Hawaii\" href=\"https:\/\/www.spicescave.com\/es\/sales\/145-comprar-sal-roja-de-hawaii.html\" target=\"_blank\"><em>sal roja de Hawaii<\/em><\/a> y <em>limu Kohu<\/em> (es un tipo de alga denominada <a title=\"Limu Kohu\" href=\"https:\/\/en.wikipedia.org\/wiki\/Asparagopsis_taxiformis\" target=\"_blank\"><i><b>Asparagopsis taxiformis<\/b><\/i><\/a>), la piel y la espina no comestibles se eliminaban mientras se com\u00eda, chupando y escupiendo las partes menos comestibles del pescado. Fue durante el siglo <em>XIX<\/em> cuando se le empiezan a a\u00f1adir otros productos como la <em>cebolla Maui<\/em> (en Espa\u00f1a tenemos una variedad similar en la zona de Zaragoza denominada Cebolla dulce de Fuentes) y los tomates u otros ingredientes locales.<\/p>\n<p style=\"text-align: justify;\"><a href=\"http:\/\/www.spicescave.com\/blog\/wp-content\/uploads\/2014\/09\/sal-roja-de-hawaii.jpg\"><img loading=\"lazy\" class=\"aligncenter wp-image-1682 size-full\" moderno de <strong>Poke<\/strong> se instaura en los a\u00f1os 70 con una gran influencia de la <a title=\"Cocina japonesa\" href=\"http:\/\/www.spicescave.com\/blog\/cocina-japonesa\/\" target=\"_blank\">cocina japonesa<\/a> y la Hind\u00fa, y se prepara principalmente a base de Ah\u00ed (at\u00fan rojo de aleta amarilla) cortado en dados o en lonchas muy finas, marinado en una salsa hecha a base de sal roja de hawaii, salsa de soja (shoyu), inamona (nuez de kukui asada y machacada), aceite de s\u00e9samo, alga limu kohu y guindilla hawaiiana picada<\/p>\n<p style=\"text-align: justify;\">En realidad el <strong>Poke Hawaiiano<\/strong> que vais a encontrar en los restaurantes va ha estar preparado de mil formas distintas adem\u00e1s de la que os he mencionado, con pulpo curado (tako), salm\u00f3n, cebolla, tomate, huevas de raya (tobiko), alga wakame, alga nori, pepino, mango, etc. Y por supuesto en muchos restaurantes os lo pondr\u00e1n con arroz de en cuenta, es que el <strong>Poke<\/strong> autentico, no lleva c\u00edtricos o vinagre de arroz en la mezcla de la marinada, ya que estos coagulan la prote\u00edna del pescado y lo ablandan, pero si os gusta &#8220;matar&#8221; un poco el sabor del pescado crudo, sentiros libres de prepararlo as\u00ed.<\/p>\n<p style=\"text-align: justify;\">Y a continuaci\u00f3n os dejo la receta del
