{"id":4536,"date":"2018-05-25T09:00:06","date_gmt":"2018-05-25T07:00:06","guid":{"rendered":"http:\/\/www.spicescave.com\/blog\/?p=4536"},"modified":"2018-06-04T10:00:05","modified_gmt":"2018-06-04T08:00:05","slug":"caracoles-a-la-mallorquina","status":"publish","type":"post","link":"http:\/\/www.spicescave.com\/blog\/caracoles-a-la-mallorquina\/","title":{"rendered":"Caracoles a la Mallorquina"},"content":{"rendered":"<p style=\"text-align: justify;\">Hoy os raigo un plato tradicional de la cocina de las Baleares, los <strong>Caracoles a la Mallorquina<\/strong>, si os gustan los caracoles en salsa este es vuestro plato sin duda.<\/p>\n<p style=\"text-align: justify;\">Lo primero que quiero contaros sobre este plato es el tema <strong>caracol<\/strong> o <strong>cargols<\/strong> como se dice en catal\u00e1n, este es el <em>&#8220;quid&#8221;<\/em> del plato y es que los caracoles tienen que ser buenos, estar muy limpios y estar bien &#8220;asustados&#8221;, sino el plato se <em>&#8220;echar\u00e1 a perder&#8221;<\/em>.&nbsp;<\/p>\n<p style=\"text-align: justify; padding-left: 30px;\"><strong>Caracoles buenos:<\/strong> el caracol que se comen en Baleares no es el t\u00edpico gordo y marr\u00f3n que solemos comer en Madrid y en casi el resto de Espa\u00f1a, estos caracoles son m\u00e1s peque\u00f1os y finos y a mi me gustan mucho m\u00e1s para hacerlos en salsa, los gordos prefiero dejarlos para hacerlos a la barbacoa, man\u00edas que tiene una.<\/p>\n<figure id=\"attachment_4557\" aria-describedby=\"caption-attachment-4557\" style=\"width: 454px\" class=\"wp-caption aligncenter\"><a href=\"https:\/\/www.flickr.com\/photos\/superbitxo\/4300900334\/\"><img loading=\"lazy\" class=\" wp-image-4557\" src=\"http:\/\/www.spicescave.com\/blog\/wp-content\/uploads\/2018\/05\/caracoles_Joan_Albert_4300900334_9268791101_z.jpg\" alt=\"Caracoles - Cargols Photo by Joan Albert @ Flickr\" width=\"454\" height=\"454\" srcset=\"http:\/\/www.spicescave.com\/blog\/wp-content\/uploads\/2018\/05\/caracoles_Joan_Albert_4300900334_9268791101_z.jpg 640w, http:\/\/www.spicescave.com\/blog\/wp-content\/uploads\/2018\/05\/caracoles_Joan_Albert_4300900334_9268791101_z-290x290.jpg 290w, http:\/\/www.spicescave.com\/blog\/wp-content\/uploads\/2018\/05\/caracoles_Joan_Albert_4300900334_9268791101_z-632x632.jpg 632w\" sizes=\"(max-width: 454px) 100vw, 454px\" \/><\/a><figcaption id=\"caption-attachment-4557\" class=\"wp-caption-text\">Caracoles &#8211; Cargols<br \/>Photo by Joan Albert @ Flickr<\/figcaption><\/figure>\n<p style=\"text-align: justify; padding-left: 30px;\"><strong>Caracoles limpios:<\/strong> esto es fundamental, es lo que se llama el <em>&#8220;purgado&#8221;<\/em> y en cada casa y en cada regi\u00f3n tienen sus costumbres pero yo recomiendo meterlos en una cesta de mimbre, con un plato con agua y otro con harina y hierbas arom\u00e1ticas (unas baritas de tomillo, romero, etc.) y tenerlos all\u00ed durante tres d\u00edas. El objetivo no es limpiarlos de babas ni mucho menos, sino tenerlos a &#8220;dieta controlada&#8221; porque estos gaster\u00f3podos acostumbran a comer hojas de hiedra, setas de todo tipo&#8230; y podemos llevarnos sorpresas muy desagradables. Una vez listos los lavamos bien con agua salada y un chorrito de vinagre, hay que cambiar el agua hasta que veamos que sale babosa.<\/p>\n<figure id=\"attachment_1705\" vamos a prepararlos y echamos los caracoles, poco a poco ir\u00e1n sacando la cabeza de la concha sin remedio.<\/p>\n<p style=\"padding-left: 30px;\"><a muchas tiendas pod\u00e9is encontrar ya <strong>caracoles<\/strong> precocidos y\/o congelados listos para usar y que salen muy buenos tambi\u00e9n, de echo yo en suelo tirar de ellos porque es m\u00e1s r\u00e1pido.<\/p>\n<p style=\"text-align: justify;\">Los <strong>caracoles en salsa<\/strong> con uno de los platos m\u00e1s t\u00edpicos de la cocina mallorquina y est\u00e1n deliciosos, adem\u00e1s all\u00ed suelen acompa\u00f1arlos con <em>&#8220;all i oli&#8221;<\/em> aunque sinceramente el caldito de los <strong>caracoles<\/strong> est\u00e1 para<em> &#8220;mojarse&#8221;<\/em>
