La <strong>Harira<\/strong> es sin duda el segundo plato m\u00e1s conocido de la cocina de <em>Marruecos<\/em> despu\u00e9s del <a title=\"Cous-cous receta\" href=\"http:\/\/www.spicescave.com\/blog\/couscous\/\" target=\"_blank\">Cous-Cous.<\/a><\/p>\n<p style=\"text-align: justify;\">La <strong>Harira<\/strong> se consume como si fuera un entrante, una forma de romper el <em> iftar<\/em> (romper el ayuno), y muchos marroqu\u00eds suelen tomar la sopa y despu\u00e9s un vaso de leche o d\u00e1tiles, incluso alg\u00fan pastel, luego se toma un tiempo para charlar y ya se &#8220;ataca&#8221; el plato principal que suele ser un plato de cous-cous o un taj\u00edn y despu\u00e9s se picotean pasteles y otras delicias muy contundentes.<\/p>\n<p style=\"text-align: justify;\">Existen dos variedades de <strong>Harira<\/strong>, la <em>bidaui<\/em> y la <em>marraquechia<\/em> (cl\u00e1sica), la base de ambas son los garbanzos, las lentejas y la carne, lo que marca la diferencia son las verduras y hortalizas que se puedan echar. Por supuesto el toque de una buena <strong>Harira<\/strong> lo dan las especias y cada <em>&#8220;maestrillo tiene su librillo&#8221;<\/em> o lo que es lo mismo en cada casa se hace al gusto de sus habitantes.<\/p>\n<p style=\"text-align: justify;\">La receta de la <strong>Harira<\/strong> que os voy a poner aqu\u00ed es la de la <strong>Harira marraquechia<\/strong>, y que espero que os guste class=\"blog-yumprint-method-item\" yumprintitem=\"0\">Ponemos a calentar el agua en una olla y a\u00f1adimos la carne del cordero, los huesos, las lentejas o los garbanzos (o ambos), la cebolla, la pimienta, la canela, el jengibre, la c\u00farcuma, el azafr\u00e1n y sal al gusto.<\/li>\t\t\t\t<li class=\"blog-yumprint-method-item\" yumprintitem=\"1\">Tapamos la olla y dejamos cocer a fuego moderado durante media hora.<\/li>\t\t\t\t<li class=\"blog-yumprint-method-item\" yumprintitem=\"2\">Mientras pelamos y troceamos los tomates y los sofreimos en una sart\u00e9n con aceite durante 10 minutos a fuego lento,  cuando est\u00e9 lo a\u00f1adimos en la olla y dejamos cocer otros 25 minutos.<\/li>\t\t\t\t<li class=\"blog-yumprint-method-item\" yumprintitem=\"3\">Finalmente diluimos la harina en un vaso de agua (templada), no tienen que quedar grumos y la a\u00f1adimos a la olla junto con el cilantro, el perejil y rectificamos de sal.<\/li>\t\t\t\t<li class=\"blog-yumprint-method-item\" yumprintitem=\"4\">Seguimos removiendo de vez en cuando y dejamos cocer 10 minutos m\u00e1s, cuanto est\u00e9 destapamos la olla y dejamos que reduzca sin la tapa 5
